Knitted Knockers UK
Knitted Knockers UK is a fabulous group of ladies who make knitted prosthesis for women who've undergone either mastectomy or lumpectomy. The knockers are all knitted by volunteers and are made with 100% cotton. They are soft and kind to the skin and take the form of a real breast. All knockers are provided free of charge and made individually for the lady who need them.

Chocolate & Beet Brownies
One of our lovely ladies brought in these brownies she made. She picked up the recipe from Maggie's Centre at the Churchill Hospital, Oxford. They are yummy and well worth trying.
Similar to chocolate brownies but much healthier, soft and moist. The addition of walnuts adds texture. Ingredients 3oz/75gms coconut butter 9oz dark chocolate 3 tbslp of xylitol 4 eggs 3.5oz ground almonds 6oz of cooked beetroot, roughly chopped 1/2 tsp cinnamon 1/2 tsp baking powder 3oz broken walnut pieces 2 tblsps flaked almonds Method 1. Heat oven - gas mark 5, elec 150C. Grease and line a 12x8 square tin with parchment paper. 2. Put the chocolate, coconut butter and xylitol in a pan and heat gently until the chocolate melts. Do not overheat or boil. 3. In a food processor blend the beetroot and eggs until smooth. 4. In a bowl add the ground almonds, cinnamon and baking powder. Stir in the chocolate mixture, add egg mixture until smooth. Stir in the walnuts. 5. Pour the mixture into the cake tin and sprinkle over the flaked almonds. Bake 20-25 mins until springy to the touch. 6. Leave to cool in the tin, then remove and cut into squares. This will keep for up to 4-days in a tin or freeze. |
